Acetate-modified starch


Main characteristics:

Low gelatinization temperature, easy gelatinization; high peak viscosity, high water absorption, strong water retention; transparent paste; good water retention, good stability at low temperature and frozen storage, reduced dehydration shrinkage; good film-forming property, ensuring smooth surface of finished products, smooth and chewy texture, no cloudy soup.

Application areas:

Deep-fried instant noodles, hot-air instant noodles; frozen dumplings, frozen wontons, frozen spring rolls, frozen pastries; ready-to-eat dumplings/wontons; fresh noodles, hanging noodles, microwave noodles; meat products.
